  • 2 tablespoons Thai green curry paste
  • 1 can (400ml) coconut milk
  • 500 grams chicken breast or tofu, cubed
  • 2 bell peppers, sliced
  • 1 cup bamboo shoots
  • 1 cup Thai basil
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 2 tablespoons vegetable oil

    Heat oil in a large pan or wok over medium-high heat.

    Add curry paste and fry for 1-2 minutes until fragrant.

    Pour in half the coconut milk and stir to combine with the curry paste.

    Add the chicken or tofu and cook until nearly done, about 5-7 minutes.

    Add bell peppers and bamboo shoots, cook for 3 minutes.

    Pour in remaining coconut milk, fish sauce, and palm sugar. Simmer for 5 minutes.
