  • 2 cups dried chickpeas, soaked overnight
  • 1 small onion, roughly chopped
  • 4 garlic cloves
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 pita bread
  • 1/2 cup tahini sauce

    Drain the soaked chickpeas well and pat dry.

    In a food processor, combine chickpeas, onion, garlic, herbs, and spices. Pulse until finely ground but not pureed.

    Transfer to a bowl and refrigerate for at least 1 hour.

    Form mixture into small balls or patties.

    Heat oil in a deep pan to 350°F (175°C).
