  • 2 cups bomba or arborio rice
  • 4 chicken thighs
  • 200 grams shrimp
  • 200 grams mussels
  • 100 grams chorizo
  • 1 onion, diced
  • 2 bell peppers
  • 2 tomatoes, diced
  • 1 pinch saffron threads
  • 4 cups chicken stock
  • 1 cup peas

    Season and brown chicken thighs in paella pan, set aside.

    Cook chorizo, then add onions and bell peppers.

    Add tomatoes and rice, stir to coat in oil.

    Add saffron-infused stock, bring to boil.

    Arrange chicken on top, simmer without stirring for 20 minutes.
