  • 1 cup quinoa
  • 1 large sweet potato, cubed
  • 1 can chickpeas
  • 2 cups kale
  • 1 avocado
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove
  • 2 tablespoons olive oil

    Cook quinoa according to package directions, fluff with fork.

    Toss sweet potato cubes with oil, roast at 400°F for 25 minutes.
