  • 4 English muffins
  • 8 large eggs
  • 8 slices Canadian bacon
  • 1/2 cup butter
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1 tablespoon white vinegar
  • 1 pinch cayenne pepper

    Make hollandaise: melt butter, keep warm.
