  • 1 cup quinoa, uncooked
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced

    Rinse quinoa thoroughly under cold water using a fine-mesh strainer.

    Combine quinoa and water in a saucepan and bring to a boil.
